Sweet Potato Casserole

3-4 lbs sweet potatoes
2 eggs, beaten
1 stick butter, softened
1/2 c brown sugar
1 t salt
1 t cinnamon
1/2 - 1 c orange juice

Bake sweet potatoes in slow oven (275F) for 2-3 hours. Cool and peel. Mash potatoes. Beat in mixer with other ingredients, using enough orange juice to make moist and fluffy. Place in buttered casserole dish and bake 30 minutes. Top with marshmallows. Return to oven and bake until brown. Don't take your eyes off of it!
