1 c onion, chopped
4 T butter
4 c rice, cooked
2 c sour cream
1 c cottage crheese
1 bay leaf, crumbled
salt and pepper to taste
16 oz whole green chiles (canned)
2 c grated cheddar
Saute onions in butter until limp. Add rice, sour cream, cottage cheese, bay leaf, salt and pepper. Mix well. In a casserole dish, put a layer of rice mixture, a layer of chiles (seeded and cut into strips) and 1/2 c cheddar. Repeat. Save 1/3 c cheddar. End with a layer of rice. Bake 25 minutes at 375 degrees F. Add cheese, bake 10 minutes.
