Pork Carnitas

2 T tomato paste
1 t salt
1 t freshly ground black pepper
10 garlic cloves, peeled
2 1/4 lb boneless pork roast, trimmed and cut into 1/2-in pieces
1 c fat-free, less-sodium chicken broth
1 T fresh lime juice

Combine first 6 ingredients in a slow cooker, on low heat. Cover and cook 6-8 hours. Remove lid and stir in lime juice. Serve with fresh tortillas, cilantro, tomatoes and avocado slices.
